FRIED GNOCCHI WITH CREME FRAICHE, CHORIZO AND MOZZARELLA

Do not be put off by the main ingredient Gnocchi - everyone I ask says they don’t like it because its a bit slimy! This recipe cooks it in butter so the gnocchi becomes little soft crispy pillows of loveliness.

This recipe should only take you 5 minutes to cook - its super easy and quick. Perfect for a speedy lunch or supper. 

Fried Gnocchi with Creme fraiche, chorizo and mozzarella
Serves 4

Ingredients:

1 bag of fresh gnocchi

1 ball of fresh mozzarella, cut into small chunks

50g Creme fraiche

100g of chorizo crumb

1 bag of fresh rocket or spinach

Punnet of cherry tomatoes, halved

1/2 jar of sun dried tomatoes, cut up into small pieces

30g butter

1/2 tsp of fresh thyme leaves

Method:

Melt the butter on a medium heat in a large frying pan and add the thyme leaves. Add the gnocchi and the chorizo to the frying pan and toss around to coat in the butter. Allow it all to go crispy.

In a serving bowl add the mozzarella chunks, sun-dried tomatoes and rocket. 

Once the gnocchi and chorizo has gone crispy add the cherry tomatoes and the Creme fraiche. Season to taste.

Stir to combine and add to the serving bowl.

Serve and enjoy whilst hot.
